PURPOSE: A method for manufacturing freeze-dried instant food is provided to offer good tastes to the instant food with high rehydration rates by softening structure of the food while preventing loss of flavor components and nutrient components of the instant food. CONSTITUTION: A method for manufacturing freeze-dried instant food includes the following steps: dehydrating a vegetable material after dipping the raw water in cold water; blanching-treating the dehydrated vegetable material in blanching liquid; molding the raw material after cooling and dehydrating the vegetable material in excipient liquid; freezing the material; and removing moisture in a molding state. A steaming process is performed for 10 ~ 20 minutes at a temperature of 80 ~ 100°C.
