METHOD FOR PRODUCING GASSERICIN A AND FOOD PRESERVATIVE

PROBLEM TO BE SOLVED: To establish a method for producing gassericin A in high yield by a medium capable of being added to a food to enable the gassericin A to be actually used as a food preservative, and to provide the new food preservative using the gassericin A in combination with other antibacterial agents. SOLUTION: The method for producing the gassericin A includes producing the gassericin A by culturing Lactobacillus gasseri LA39 strain in a medium containing whey.
