PROBLEM TO BE SOLVED: To provide an automatic bread maker capable of easily producing delicious rice-based bread by adjusting a degree of gelatinization of starch of raw rice so as to automatically produce rice-based bread.SOLUTION: An automatic bread maker produces and uses a rice paste where a degree of gelatinization of starch of rice has been adjusted to prevent rice starch molecules absorbing water from wholly changing into gel owing to heating. Accordingly, when bread is produced using rice as a cooked material, the need for crushing raw rice into rice powder is eliminated and noise and vibration can be reduced in bread production, thereby enabling the automatic bread maker to cope with all of a variety of steps between kneading to baking of read material to produce rice-based bread stably. |
