The invention relates to a mainly mechanical device for cleaning and for processing the rectum and pelvis of slaughtered pigs, and to the operating method thereof, which solves the problem of cleaning and disinfecting such devices, essentially the mandrel, which is inserted into the rectum of the animal, and the knives, these operations being performed as a single operation according to the present invention. This allows, successively, in two to three seconds, the rectum of the animal to be entered, then cut, and an incision to be made in the pelvis of the animal, while simultaneously proceeding to clean and sterilise the mandrel and knives, which is made possible by the device incorporating a semi-sealed chamber in which cleaning takes place. |
