FIELD: food industry.SUBSTANCE: invention relates to food industry and relates to technology of producing sauces. Fruit sauce is produced by pouring water and holding for swelling of ground pumpkin seeds extraction cake, mixing with cherry plum puree, plum puree, quince puree, sugar and salt, boiling till dry substances content is nearly 22 %, adding dill seeds, coriander, red hot pepper, extract of blackcurrant and birch leaves, packing, sealing and sterilising.EFFECT: obtained sauce has reduced after-taste of pumpkin seeds in product without changing its adhesion properties.1 cl |
