The present invention relates to a method for preparing pickled bracken. More specifically, the preparation method of the present invention prepares pickled bracken which improves the flavor and functional effects of bracken by: preparing table soy sauce by boiling soy sauce; and aging the bracken by soaking the bracken in pickled meat broth, prepared by mixing the table soy sauce with the meat broth. According to the present invention, the method for preparing pickled bracken comprises: a material preparation step of boiling bracken, preparing table soy sauce by mixing water with soy sauce, preparing meat broth by boiling anchovies or kelps in water, and preparing an enzyme solution by seasoning Japanese apricots or wild grasses; a meat broth preparation step of preparing pickled meat broth by mixing the table soy sauce with the meat broth, boiling the same, and adding vinegar and the enzyme solution thereto; and a pickled bracken aging step of aging the bracken by soaking the boiled bracken in the prepared pickled meat broth. |
