FIELD: food industry.SUBSTANCE: invention relates to food industry. Disclosed is a method for preservation of food products by adding at any stage of process a food additive based on derivatives of oxoacids - salts of mono[(2-dimethylamino)ethyl] esters of carboxylic acids of general formulawhere R is a carboxylic acid, selected from: fumaric, amber, maleic, α-ketoglutaric, oxalic, D- or L-malic, Et denotes ethyl and Me denotes methyl. Food additive is added in form of an aqueous solution with concentration of 0.01-1.0 wt% or in form of crystalline salt in an amount of 0.01-150.0 g/kg or g/l of food product.EFFECT: method significantly reduces growth of microflora and microfauna and significantly prolongs storage life of food products.1 cl, 3 dwg, 13 tbl, 2 ex |
