The present invention relates to a method for manufacturing a Jerusalem artichoke salad and a Jerusalem artichoke salad manufactured thereby. According to the present invention, the method comprises the steps of: (S1) shredding Jerusalem artichoke, soaking the shredded Jerusalem artichoke in vinegar water, and removing moisture from the shredded Jerusalem artichoke; (S2) shredding onion, and cutting chives into predetermined sizes; and (S3) mixing food materials prepared in the step (S1) and (S2) with seasonings. According to the present invention, since raw Jerusalem artichoke is used without cooking, useful effects contained in Jerusalem artichoke can be kept without damage. Moreover, Jerusalem artichoke, which is a main material, is pre-treated by vinegar water, yellowing is prevented, so taste effects are provided and storage is improved. |
