<P>PROBLEM TO BE SOLVED: To provide a method for sterilizing a food article which is made from an inhomogeneous mixture composed of at least one liquid phase and solid particles, without causing significant influence to deterioration of sensual quality of the food article. <P>SOLUTION: This method for sterilizing the food article which is made from an inhomogeneous mixture composed of at least one liquid phase and solid particles comprises: (i) a preparation process of preparing a concentrated solution/particle phase decreased in salinity, (ii) a sterilization process comprising a process of electric heating and a process of retaining a concentrated phase, (iii) a cooling process of cooling a sterile concentrated phase and (iv) a packaging process of packaging. The concentrated phase is mixed, after the process of heating, with a water phase which contains sterile salt water necessary for final mixture of the inhomogeneous mixture composed of at least one liquid phase and solid particles. <P>COPYRIGHT: (C)2008,JPO&INPIT |
