PROBLEM TO BE SOLVED: To provide a salt reduced seasoning capable of largely reducing salt and having flavor similar to a salt non-reduced seasoning.SOLUTION: There is provided a salt reduced seasoning which replaces a part of sodium chloride with potassium chloride and contains (a) acetic acid, (b) a mixture of 4-hydroxy-2-ethyl-5-methyl-3(2H)-furanone and 4-hydroxy-5-ethyl-2-methyl-3(2H)-furanone (HEMF), (c) isoamyl alcohol, (d) at least two kinds of methional and (e) a compound such as 2-methylphenol or 2-methoxyphenol.SELECTED DRAWING: Figure 1 |
