PROBLEM TO BE SOLVED: To improve the embryo content and the degree of grain polishing in milled rice with embryo, relating to a structure and a method of manufacturing milled rice with embryo for manufacturing milled rice with embryo (embryo rice), and the milled rice with embryo. SOLUTION: In the structure 10 of manufacturing milled rice with embryo, a mechanism 12 for polishing and milling rice performs a process for polishing and milling rice, a mechanism 16 for polishing rice performs a process for polishing rice, and a wet-type mechanism 20 for wash-free processing performs wet-type wash-free processing, so as to manufacture milled rice with embryo. Here, upon rice polishing and milling processing, rice polishing processing, and wet-type wash-free processing, even reducing a pressure applied to brown rice, polishing and milling rice, or polishing rice, and increasing the embryo content in the milled rice with embryo, the degree of grain polishing in the milled rice with embryo can be improved by repeatedly performing the polishing and milling processing several times, and polishing the polishing rice with water in the wet-type wash-free processing.
