<p>In the process, a measure of fresh grape-juice is delivered from a holding vessel into a fermentation vessel contg. a charge of prefermented must, e.g., from a previous batch. The level in the holding vessel is then brought back to its original height by pumping in some of the non-fermenting mixt. from the fermentation vessel, the cycling of this fixed measure between the two vessels being repeated until fermentation is completed. The addn. of pre-fermented must greatly accelerates the process sothat the size and cost of the installation is reduced.</p> |
