Three concentric pipes with staggered ends define a labyrinthine channel between one end of the outermost pipe and the opposite end of the innermost pipe. The mash is fed in to the annular channel between outer and middle pipe at the start end of the labyrinth and the hydrolysed mash is fed out at the opposite end of the inner pipe. Steam is fed into the outer annular channel via a number of quasitangential spoke pipes leading from a number of axially spaced ring manifold connected via individual valves to the main steam line.
