摘要 <p>Filling beer and other frothy drinks requires a small amount of beer to be filled into the container before this has been pressurised for the filling operation. The relaxation of pressure which the beer immediately undergoes causes it to foam, and it is at this point that the genuine filling operation commences. The container is pressurised with air and then is filled so as in this way to avoid any direct contact between the air and the beer being filled. This has a pronounced effect on the taste of the beer, undiluted as it now is by the air which otherwise inevitably gains access to the container during filling. The foam drives this contaminating air out of the bottle.</p>
