A method of producing enzyme preparations having L- alpha -amino acyl amidase activity comprising cultivating a micro-organism selected from the group consisting of Pseudomonas putida, Pseudomonas reptilivora, and Pseudomonas arvilla in a nutrient medium and separating an enzyme preparation from said nutrient medium.
