A curds/whey mixture, introduced into a hopper (10), fills perforated tubes (12) in which the whey is separated from the curds which become compact. A plate closing off the base of the tubes (12) retracts periodically and the curds fall suddenly from a specific height onto an underlying plate (24), and are then cut by the first plate returning to its initial position. The sections of curds are then transferred into one of the moulds with several cells. <IMAGE>
