<p>Prodn. of starting materials (I) for mfr. of processed cheese is carried out by subjecting a milk protein source (II) to exclusion chromatography and ion-exchange chromatography as described in the Parent Patent to effect partial or total removal of whey proteins. (II) comprises one or more materials selected from skimmed milk, whole milk, buttermilk, casein, caseinates, other protein materials derived from mammalian milk, or mixts., and is pretreated by physicochemical operations (unspecified). Removal of whey proteins avoids flocculation and gelling during heat treatment of the processed cheese, thus avoiding the gritty texture occurring when large amts. of milk powder are used.</p> |
