A process for improving the clarity and filterability of xanthan gum solution comprises: a) treating a crude xanthan gum solution at a pH of 2 to 7 with an effective amount of an acid or neutral protease, and then b) raising the pH to 8-13 and, optionally, c) then lowering the pH to 6-7. |
