1. Process for cooling an ingot in a continuous casting plant according to which the ingot is divided into fictitious elements and the water flow-rate to be sprayed on each element is periodically determined as a function of its age and by taking into account the quantity of heat extracted from this element during its dwell time in the mould, characterized by the steps of, in order to determine the quantity of heat extracted from each element during its dwell time in the mould, determining at regular time intervals the total quantity of heat extracted from the mould during this time interval, allocating to each element present in the mould during this time interval a fraction of this total quantity of heat which depends on the distance (I) of the element from the free surface of the metal in the mould and, when a portion emerges from the mould, summing up all the fractions of quantities of heat which have been allocated to this portion during its dwell time in the mould.
