摘要 PURPOSE:To provide a microbial rennet having improved properties in cheese production, having a low ratio of PA (proteolytic activity)/MCA (milk clotting activity), by treating the microbial rennet pharmaceutically. CONSTITUTION:A rennet derived from a microorganism such as Mucor pusillus, Mucor miehei, Endothia parasitica, etc. is acylated with a dicarboxylic anhydride such as meleic anhydride, succinic anhydride, phthalic anhydride, etc. Consequently, a microbial rennet having an index of PA/MCA of 50-80 and an index of MCA of at least 100 is obtained when a ratio of PA/MCA of untreated microbial rennet is calculated as 100, and an MCA of the unreacted microbial rennet is calculated as 100, respectively.
