The invention relates to a mixed bacterial culture which is prepared by first inoculating a milk starting material which is suitable as nutrient substrate with a culture of a generally obtainable strain of Streptococcus thermophilus, and incubating at suitable temperature, and then inoculating the milk starting material with an amount of a culture of a generally obtainable strain of Lactobacillus bulgaricus. The invention also relates to a process for the preparation of a mixed culture of this type and to a composition which contains this mixed culture and which, because of the mode of preparation specified for the mixed bacterial culture, is particularly suitable for the preparation of yogurt with a high content of dextrorotatory lactic acid. The invention also relates to a process for the preparation of yogurt using the said mixed bacterial culture.
