PURPOSE:In preparing a KOJI by inoculating a mold into a solid KOJI raw material, to prepare a high-quality KOJI having a high enzymatic titer, improved flavor, etc., by blending the KOJI raw material with dried pulp in KOJI preparation process, so that water content of the KOJI raw material is easily adjusted. CONSTITUTION:In preparing a KOJI by inoculating mold (e.g., Aspergillus oryzae, etc.) into a solid KOJI raw material (e.g., rice, etc.), the KOJI raw material is blended with dried pulp powder (e.g., cellulose powder, etc.) in KOJI preparation process, to give a solid KOJI.
