PURPOSE:To remove the shell of a nut, with small number of workers, in high yield and productivity, by heating an unshelled nut with electron beam, quenching the nut, crushing the shell between a pair of rotating rolls, and separating the shell and the astringent coat from the kernel. CONSTITUTION:An unshelled nut, such as chestnut, acorn, etc., is exposed to electron beam of about 25-50MHz for 10- severl tens minutes to effect the preferential heating of the kernel. The astringent coat is separated from the kernel by the pressure of generated steam and attached closely to the inner surface of the shell. The heated nut is immersed in e.g. liquid air for several seconds to preferentially quench the shell and the astringent coat and facilitate the breakage thereof. The nut is passed between a pair of rubber rolls, and separated into the crushed shell and astringent coat and the kernel completely free from astringent coat. The kernel can be separated by screening the product. The process can be fully automated, and the removal of the shell can be carried out with small number of workers in high productivity.
