The present invention relates to a method for manufacturing dried persimmons containing a lot of functional polyphenol, and more specifically, to a method for manufacturing sulfur-free functional polyphenol dried persimmons manufactured to not contain sulfur, which is likely to cause allergy, by skipping a sulfur fumigation process, and to contain relatively greater content of functional polyphenol than an existing dried persimmon. According to the present invention, the method comprises: a first step of aging a persimmon in a low temperature storage at 1 to 2C for 10 to 15 day and peeling the persimmon; a second step of primarily drying of the peeled persimmon at a wind speed of 0.5 to 5 m/s for 40 to 60 days; a third step of secondarily drying of the primarily dried persimmon by heating the same in a closed state; a fourth step of tertiary drying the secondarily dried persimmon under sunlight to manufacture the tertiary dried persimmon; and a fifth step of packing and forwarding the persimmon. |
