PURPOSE:To obtain a hard butter composition having a soft eating feeling at low temperature, instantly melting properties in a temperature range a little lower than bodily temperature and improved blood resistance, using a triglyceride having specific fatty acid constitution as a main component. CONSTITUTION:A hard butter composition comprising SUS type triglyceride with >=4wt%, preferably <=15wt% total amounts of behenic acid, lignoceric acid, cerotic acid and arachic acid in total saturated fatty acids bonded to glycerin and <4wt% arachic acid alone as a main component and having <=3wt% diglyceride component in the composition.
