PURPOSE:Large-size pastry for cake is rapidly refrigerated, cut into small pieces, when used, the pieces are thawed, decorated with ingredients to form short cake whereby cakes can be readily produced even in the increased demand periods. CONSTITUTION:Sponge cake is coated with cream and decorated to form a large-size cake pastry, and the pastry is rapidly frozen and packed in a box. The pack boxes are refrigerated in the place where they have been made or transported to the other places and stored there. When used, the large-size cake is cut into several small-size pieces of cake, when used, the pieces are thawed and decorated with ingredilents to form short cake. the products are packed in boxes as final products. In other words, large-size cake pastry can be previously prepared without deterioration of freshness and a large number of short cake pieces are readily made even in the period of increased demands.
