PURPOSE:To measure the pressure in food remotely by fixing a pressure receiving part atop of an insertion cylinder inserted into the food and detecting pressure applied to this pressure receiving part. CONSTITUTION:The insertion cylinder 1 is inserted into the food to the position where the pressure is measured and the food is frozen while the pressure receiving part 2 provided atop of the insertion cylinder 1 is brought into contact with the internal surface of the food; and then the food expands in the freezing process and internal pressure is generated in the food. This pressure variation is detected by a pressure sensor 5 as the force of the food surface which contacts the pressure receiving part 2 and pushes the pressure receiving part 2 when the food expands and the pressure sensor 5 sends a signal an electric signal in proportion to the pressure applied to the pressure receiving part 2. Then, this electric signal is pressure-converted 6 into a standard electric signal, which is received by a receiving meter 17 through a lead line 8. The receiving meter 17 records and indicates the pressure variation and adjusts cooling conditions such as the temperature and flow rate of a cooling medium on the basis of the pressure variation. Consequently, the pressure in the food is measured remotely.
