PURPOSE:To produce a beta-amylase agent having high quality and titer, by forming calcium phosphate gel in a beta-amylase-containing waste liquid of wheat starch production process, adsorbing beta-amylase to said gel and separating and recovering the gel. CONSTITUTION:Wheat starch waste liquid is added with about 1-10mM, preferably 3-8mM of a phosphate ion-donative compound and with about 5-50mM, preferably 15-40mM of a calcium ion-donative compound and the components are made to react with each other at 5-50 deg.C, preferably 15-35 deg.C and pH6-9, preferably 6.5-7.5 for about 1-10hr to obtain calcium phosphate gel containing adsorbed and captured beta-amylase. The gel is separated and recovered to obtain the objective beta-amylase agent concentrated to about 1/20-1/50 of the original waste liquid in terms of volume. Furthermore, acids or water-soluble salts are added to the suspension of said gel and the solubilized beta-amylase is separated and recovered from the gel to obtain a beta-amylase agent.
