PURPOSE:To obtain a dried yeast, having excellent digestibility and absorbability and useful as a health food, food additive, feed, raw material for chemicals, etc., by hydrolyzing muddy yeast fungal cells with a proteolytic enzyme and drying the resultant substance. CONSTITUTION:For example, yeasts generated in a large amount in producing beer are screened, centrifuged and washed to provide muddy yeasts, which are then subjected to cytoclasis (destroyed by treating with a cell wall lytic enzyme, such as zymolyase, etc., suspending the treated yeasts in water and using osmotic pressure or destroyed by mixing with glass beads, etc., and stirring) and then centrifuged. A pH adjustor (e.g. NaOH), as necessary, is added to the obtained cellular contents and a proteolytic enzyme (protease) is added to hydrolyze proteins contained therein. The resultant slurry is subsequently dried at a low temperature, pulverized and sieved to afford the aimed dried yeast product.
