PURPOSE:To prepare a bottled food having excellent preservability at a low cost, by putting a food into a bottle, sealing the bottle after deaeration, preliminarily heating the content under specific condition, treating with a pressurized thermal sterilization apparatus heated with blasted steam and cooling the content while keeping the temperature difference between the ambient environment and the content within a specific range. CONSTITUTION:A food is put into a bottle, deaerated, sealed and preliminarily heated at an ambient temperature of 60-100 deg.C and the ambient temperature is slowly raised to 100-130 deg.C spending >=5min, preferably 10-30min. The preheated food is sterilized by maintaining in a pressurized thermal sterilization apparatus heated with blasted steam keeping the sterilization chamber at 100-130 deg.C and 0.5-2.5atm. (gauge pressure) for 3-180min. The sterilized food is cooled while keeping the temperature difference between the ambient environment and the content in the bottle to <=50 deg.C to obtain the objective bottled food.
