The process for dehydration of a food product consists in feeding a basin (trough) 3 mounted over two cylinders 1, 2 with the same diameters, which are movable in rotation about their respective axes, one of the two cylinders being at a temperature permitting dehydration of the product, the other cylinder remaining at a temperature below 100 DEG C.
