METHOD FOR PRODUCING ALPHA-GLUCOSYLTRANSFERASE

A glucosyltransferase is prepd. by culturing Erwinia rhapontici ATCC 29283 at 20-25 deg.C and pH 5.5-6.5 under aerobic condition in the medium containing 40-100 g/l sucrose or fructose, 5- 20 g/l yeast extract, 15-120 ml/l corn steep liquor, 12-16 mM disodium phosphate etc.. The glucosyltransferase (GTase) is obtd. in high yield. The GTase converts at least part of sucrose to isomaltose. Isomaltose can be used as a sucrose substitute in foodstuffs, etc..
