METHOD FOR PRODUCING OLIGO-FRUCTOSE

A fructo-oligosaccharide is prepd. by mixing 10-60 % sucrose soln. with 5-10 unit of fructosyltransferase derived from Aerobasidium L-48 KFCC 10245 per 1 g sucrose and 5-15 unit of glucose oxidase per 1 g sucrose, and reacting the mixed soln. at 32-40 deg.C, pH 5-7 and 200-1000 rpm under aerobic condition. The fructo-oligosaccharide content of reacted soln. is high (about 88 %) .
