摘要 <p>PURPOSE:To obtain a yeast in Saccharomyces cerevisiae which has high proliferation rate in the fermentation mixture for barley SHOUCHU and high resistance to alcohol by selecting a brewing yeast showing pink in the TTC tinting tests and white in the DC tinting test. CONSTITUTION:The yeast for brewing is obtained by collecting the one showing pink in the TTC tinting test where the cell bodies are suitably diluted (about 200 cells every plate), plate-cultured in a bottom culture medium at 30 deg.C for 2 days, and placing TTC agar solution at 45 deg.C gently onto the colony in layers and allowing it to stand at 30 deg.C for 2 to 3 hours and observing its color change, and showing white in the DC tinting test where the cell bodies are suitably diluted (about 200 cells every plate), plate-cultured in a bottom culture medium at 30 deg.C for 2 days, and placing top layer DC agar solution at 45 deg.C gently onto the colony in layers and allowing it to stand at room temperature for 30 minutes after solidification and observing the tinting of the colonies.</p>
