<p>PURPOSE:To automatically send out a warning in the case of abnormality of unrefined SAKE by automatically controlling daily temperatures in the interior of a tank to bring the temperatures close to a set and memorized optimum temperature and automatically regulating fermentation. CONSTITUTION:An automatically fermentation controlling system of unrefined SAKE (rice wine) of refined SAKE or the like is equipped with a temperature sensor 2 for detecting temperature of unrefined SAKE in the interior of a fermentation tank 1, temperature controlling means 4, 6, 8 and 10 to cool and heat the unrefined SAKE and a computer 12. An optimum temperature is set and memorized in the computer 12, the optimum temperature is compared with the temperature of the temperature sensor 2 and the temperature controlling means is operated in the case of out of an allowable temperature range. The automatically fermentation controlling system is provided with a specific gravity hydrometer 14 to measure the specific gravity of unrefined SAKE and an alarming means 22, the measured specific gravity is compared with a preset and memorized optimum specific gravity and a warning is automatically sent out by an alarming means 22 in the case of out of an allowable specific gravity range.</p> |
