METALLIC SALT OF MILK CASEIN AND PRODUCTION THEREOF

PURPOSE: To obtain a magnesium-reinforced milk casein. CONSTITUTION: At first, the content of metal ions of calcium, etc., in a milk- casein aqueous solution is reduced to <=200ppm. This milk-casein aqueous solution is again treated with an aqueous solution of salts whose mixed molar ratio of calcium to magnesium is 2>=Ca/Mg>=0.5 to obtain the objective milk- casein metal salt containing magnesium in an amount of <=5wt.%. The product is useful as a new magnesium-reinforced food and effective for proliferating diseases attributable to magnesium deficiency.
