A method for the preservation of grain in storage silos includes the steps of: compressing air taken from the environment and adjusting its flow rate, cooling said air and increasing its carbon dioxide content through sublimation of solid carbon dioxide and/or evaporation of liquid carbon dioxide, feeding said gaseous mixture into the storage silos, and controlling the temperature of the mixture flowing into and out of the silos. An apparatus for the preservation of grain in storage silos according to the method of claim 1 includes a group of devices (V, B, D, E, F) for compressing air taken from the environment and adjusting its flow rate towards a heat exchange chamber (A, I) in which solid and/or liquid carbon dioxide is fed (C, G, H), feed pipes which connect said chamber (A, I) to the silos, and devices for measuring the temperature of the gaseous mixture flowing into (TI) and out (TR) of the silos.
