FIELD: biotechnology. SUBSTANCE: method of preparing protein biomass based on new strain of fungus Pleurotus ostreatus "ВКПМ" F-697 is proposed. Strain-producer of protein is grown under submerged conditions on nutrient medium containing necessary sources of nitrogen, carbon, mineral salts, under aeration, at pH = 6.8-7.2, at 26-28 C. Obtained biomass is separated and dried and it can be used as food addition. Cultivation method is based on preferable use of surface-active substance - bone fat or vegetable oil (0.1-3.0 vol.%). Also, procedure of "cooling" culture or sowing material is preferably used. Obtained biomass shows nonconventional aromas (except for usual fungal one). EFFECT: intensified biosynthesis process, accelerated biomass producing, high protein level. |
