PROBLEM TO BE SOLVED: To obtain an alcohol dehydrogenase inhibitor having high safety and excellent alcohol dehydrogenase inhibiting activity and an antibacterial agent inhibiting a decomposition of ethyl alcohol to acetaldehyde and provide a production of food inhibited in generation of aldehyde caused by ethyl alcohol. SOLUTION: This alcohol dehydrogenase inhibitor contains at least one compound selected from the group consisting of hinokitiol, rutin, tannic acid and tannic acid salts as an effective ingredient. This antibacterial agent contains at least one compound selected from the group consisting of hinokitiol, rutin, tannic acid and tannic acid salts, and ethyl alcohol. This production of food is to blend at least one compound selected from the group consisting of hinokitiol, rutin, tannic acid and tannic acid salts and ethyl alcohol to the food.
