STABILIZATION OF ASCOSPORE LACTOBACILLUS SPORE IN AQUEOUS SYSTEM

PROBLEM TO BE SOLVED: To provide a method for stably maintaining the spores of an ascospore lactobacillus in an aqueous system (for stably maintaining the spores of the ascospore lactobacillus in the state of the matured spores as such without germinating the spores). SOLUTION: This method for stabilize the spores of an ascospore lactobacillus in an aqueous system comprises mixing an aqueous phase containing the ascospore lactobacillus with a fat phase comprising a fat having a melting point of >=40 deg.C and containing an lipophilic emulsifier and subsequently homogeneously mixing the obtained W/O type emulsion containing the ascospore lactobacillus with an aqueous phase (outer aqueous phase) to form a W/O/W type emulsion.
