<p>PROBLEM TO BE SOLVED: To surely sterilize a dried vegetable while restricting the quality deterioration of the dried vegetable by adding a high conc. of ethanol to the dried vegetable, executing a sealing and heating processing and, after that, executing opening and drying again. SOLUTION: The ethanol provided with the concentration being more than 80 volume % with respect to the dried vegetable, the sealing and heating processing is executed and, after that, opening and re-drying are executed. A welsh onion, a cabbage, a carrot, garden peas and Jew's ear, etc., are cited as the dried vegetable. The dried vegetable is put into a sterilization processing container and, then, the ethanol is added so as to execute sealing, for example, as a sealing method. In this case, the ethanol can be directly added in a fluid state or sprayed. It is desirable that an operation such as stirring-up, etc., is executed in order to uniformly mixing the dried vegetables and the ethanol. It is favorable to execute heating for 20-90 minutes and drying is executed by hot air drying or natural drying, etc., for example.</p> |
