PROBLEM TO BE SOLVED: To provide the delicious food of soft rice texture provided with glossy desirable appearance without the break of rice grains by adding pectin to raw rice for a specified amount after washing the rice. SOLUTION: By adding the pectin to the raw rice for 0.1-10 (weight)% after washing the rice, this food is obtained. Further, it is preferable to add one kind or two or more kinds of saccharides (0.1-10% to the raw rice), monoglyceride (0.01-5% to the raw rice) and phospholipid (0.01-5% to the raw rice). Also, it is preferable that the saccharides are the sugar and/or sugar- alcohol of polymerization degree 2-10, the monoglyceride is organic acid monoglyceride and the phospholipid is the one for which the weight of the phospholipid not containing nitrogen atoms is more than 1.0 to the weight of the phospholipid containing the nitrogen atoms. |
