PROBLEM TO BE SOLVED: To provide instant cocoa of mild and mellow taste that can serve a cocoa drink only by pouring hot water thereto without giving rough and powdery sensation to the tongue. SOLUTION: The raw materials containing cacao mass and dairy ingredients are dissolved in warm or cold water and spray-dried to prepare a powder comprising ingredients-fused and integrated particles. This powder is granulated, when necessary, combined with saccharides to give the objective instant cocoa. In a preferred embodiment, this instant beverage contains cacao mass, cocoa butter, dairy ingredients and saccharides and the dairy ingredients is more preferably milk. |
