PROBLEM TO BE SOLVED: To obtain a simply measuring color developing reagent of nitrite naturally contained in food material or nitrite radical added as a color developer of food, and a simple method for quantitatively measuring by using it. SOLUTION: A simply measuring color developing reagent of nitrite radical comprises in combination sulfanilamide and/or sulfanilic acid, N-1- naphthylethylenediamine and solid acid at ambient temperature. The method for simply measuring nitrite radical in food comprises the steps of extracting nitrite radical by water from food, filtering the radical extract, then, adding the reagent to color it in red, then colorimetrically analyzing the radical color developing liquid and standard color developing sample, and hence deciding a density value of the radical. |
