<p>The invention discloses a process for separating gelling β-glucan from cereals. The process involves: 1) extracting a soluble factor from cereal flour into solution, and not extracting β-glucans into solution; 2) separating the starch from the solid residue remaining after the first step; and 3) adding the extract from the first step to the non starch residue from the second step. The soluble factor causes gelling β-glucan to be released, from the non starch residue, into solution.</p> |
