PROBLEM TO BE SOLVED: To properly advance a silage fermentation and produce a best silage in a short time without causing an abnormal fermentation or a defective fermentation by adding a saccharide in a specific proportion to a food refuse and fermenting the resultant mixture. SOLUTION: A saccharide which is preferably one or more kinds of monosaccharides selected from among glucose, galactose, trehalose, etc., in an amount of 0.1-7.0 wt.% based on a food refuse such as a bean-curd refuse is added thereto and the resultant mixture is then fermented at a temp of, e.g. 15-23 deg.C for 5 days to produce the objective silage. The method for producing the silage is preferably useful especially in a cold district. The saccharide is preferably used together with a feed for regulating the moisture such as a beet pulp. |
