<p>The invention relates to DNA molecules, encoding enzymes having fructan exohydrolase activity, to polypeptides encoded by the DNA molecules and to peptides consisting of at least 10 consecutive amino acids from the polypeptide. In addition, the invention provides a vector comprising the DNA molecule under the regulation of suitable transcription initiation and optionally termination sequences, a transgenic plant cell, comprising a copy of the DNA molecule not endogenously present therein or an antisense version thereof, a transgenic plant, comprising at least one such transgenic plant cell, and other host cells, comprising the DNA molecule or the vector. Finally, the invention relates to probes specific for FEH and a method for fishing genes, encoding polypeptides having fructan exohydrolase activity by means of the probe and methods for inhibiting or stimulating fructan degradation.</p> |
