PURPOSE: Provided is a washing method of rice with acidic and basic ionized water to wash extraneous matters on the surface of rice so that rice can be stored for a long time without any degeneration. CONSTITUTION: In producing rice through a grinder, a polisher, a color selector or so on in sequence, the washing method of rice with ionized water is characterized by washing rice by acidic ionized water with 4.5-5.5 in pH and 110 in turbidity in a frist grinder(15) and basic ionized water with 8.5-10.5 in pH and 110 in turbidity in a second grinder(16) and then transferring into a tank(13) for polishing rice.
