PROBLEM TO BE SOLVED: To provide a method producing a high-quality instant tea by which the instant tea of a powder having a vivid color tone, capable of providing a vivid light blue color when dissolved, and having a rich flavor and perfume is produced while preventing the discoloration during the step for producing the instant tea.
