<p>PROBLEM TO BE SOLVED: To provide a method for applying a reduced pressure on the contrary and treating pickles of vegetables without applying a positive external pressure when the pickles of the vegetable are processed. SOLUTION: Fresh pickles can be prepared by discarding water discharged because untough cell walls in materials of slices of vegetables or fruits which are the materials for the pickles are readily destroyed to discharge bubbles or water present therein when the slices are kept in a state in which a small amount of common salt exists around the slices under a reduced pressure, subsequently permeating a favorite seasoning liquid and thereby replacing the interior of the destroyed cells with the seasoning liquid.</p> |
